Busy Life, But Having Fun

Life is full of new twists and turns.  For me, my newest twist is becoming a real business-woman.  I never thought it would happen to me.  I love staying at home with my kids, and I love letting my hubby do all the bread-winning.  Then God dropped something in my lap.  It’s been a real game-changer.  I have found products that work right alongside THM, and I now have more energy, more happiness, and more health.  I’m going to post my story here another day.
Today, I want to give you a quick but simple recipe, just so you know I haven’t forgotten you, and that I still love and appreciate every one of you that comes to visit.  😉
This was my breakfast this morning, and boy, was it tasty!

Easy Egg Scramble
 
Quick, easy, and packed with nutrition! Skip the onions for a Deep S.

Ingredients
  • 1-2 T. butter
  • ¼ cup chopped onion
  • 2-3 baby portabello mushrooms, sliced and/or chopped
  • 1 cup chopped kale
  • 6 eggs
  • Salt and red pepper to taste
Instructions
  1. Melt the butter, add the veggies.
  2. Saute until tender or nearly so.
  3. Add the eggs and do a rough scramble (where you mix them in the pan--gives a nice, rustic taste).
  4. Season with salt and red pepper to taste. Enjoy!
